Better known as Sage, this herb is used for culinary and medicinal purposes. It is an evergreen shrub and the 'Tricolor' variety has aromatic grey-green leaves, variegated with cream and flushed with purple on new growth and has a milder flavour than green sage. It has light blue flowers in early summer. Sage can be used fresh or dried. The fresh leaves have a more delicate flavour and can be used in stuffings, sausages and in poultry and fish dishes. It also adds great flavours to vegetable and bean dishes. Sage pairs well with rosemary and thyme.
Position in full sun and in well-drained soil.
