Dill is an annual herb with wispy, fern-like, green leaves and grows to 40cm to 60cm tall. It has a strong, distinctive taste that is like a combination of fennel, anise and celery, with warm, slightly bitter undertones.
Use only the dill leaves. This herb can be used to flavour grilled and poached fish, potatoes and vinegars. In can be used in pickling gherkins. It can also be added to yoghurt/sour-cream dips, egg dishes, green beans or rice dishes or as a garnish. Add at the end of cooking for best flavour.
Plant in rich, well-drained soil and in full sun.
